Place 1 teaspoon of butter into a ramekin or mug, and melt the butter in the
microwave. Swirl it around to coat the inside of the mug. Cooking spray or olive oil can
also be used to grease the inside of the mug
In a small bowl, mix together 1 beaten egg and 1 tbsp heavy whipping cream
Add Β½ tsp vanilla and Β½ tsp almond extract to the egg mixture
In another small bowl, combine cocoa powder, Erythritol and baking powder, mix
to combine well
Add the dry ingredients into the greased ramekin or mug
Pour the wet ingredients in and stir well until the mixture is smooth
Add in Keto friendly chocolate chips –Β Microwave for about 1 1/2 minutes – check after 1 minute
(microwave times vary)
Serve in the mug, ramekin or on a plate
Optional: Crush up ΒΌ cup of raspberries and serve on top of the cake

This is wonderful! I tried it because I’m diabetic and it’s so good! Nice and moist! I used coconut oil spray instead of butter and it worked out great. I also dropped in maybe a tbls of pecans. That was great too. I bet raspberries would put this out of this world!
