Prepare red velvet cake mix according to package instructions.
Fill cupcake liners 1/2 way – bake according to package instructions.
While cupcakes are baking prepare red icing.
Place 1 tub of white icing in a large mixing bowl. Add about 10 drops of red food coloring.
With a hand mixer – mix until well blended. The icing is probably a pink color at this point.
Mix in 1/4 a cup of cocoa powder to this will darken it up. Add in ten more drops of red
food coloring and mix until well blended. Repeat this process until you have the desired
red color you want. Fill 1 piping bag with white icing and 1 piping bag with red icing –
piping bags work best for this
Let cupcakes cool completely after baking.
Start by piping white icing just on the outer edge of each cupcake.
Fill in the center of each cupcake, working your way up, with red icing.
Your Santa hat should take form now. Top each hat off with a mini marshmallow.
