Low Carb Keto Breakfast Casserole
Preheat the oven to 350 degrees.
In a mixing bowl, combine all of the ingredients except the fresh spinach. Stir to combine completely.
Place 2 cups of fresh spinach leaves in the bottom of a greased loaf pan
Pour the egg mixture over top of the spinach leaves in the loaf pan, and spread into an even layer.
Bake the mixture in the loaf pan uncovered for 35-40 minutes until the egg is completely cooked through.
Garnish with freshly chopped parsley or green onions if desired.

- 8 Large eggs beaten
- ½ c Chopped red, yellow and orange bell peppers
- ¼ c Chopped onion
- 3 oz. Crumbled feta cheese
- 10 Slices of cooked bacon crumbled
- ½ tsp Garlic powder
- 2 c. Fresh spinach
