How to make keto cookie bars
Preheat the oven to 180 °C / 350 °F. Butter a square or rectangular pan.
Place butter, peanut butter, cream cheese and sweetener in a medium mixing bowl. Mix with a whisk until you get a very smooth mixture. It should not have any kind of lumps.
Then, add the two eggs at room temperature.
Gradually add the almond flour until it is fully incorporated. The mixture for these bars in a little denser than the dough for a normal sponge cake.
Pour the mixture into the pan and cover with chocolate chips. If you wish you can add the chocolate chips 5 minutes before removing the pan from the oven; you can add a little more or less according to your preference.
Bake for about 35 minutes, until all the top is golden brown. Remove from the oven and put it in rest for about 20 minutes. Cut into squares and enjoy
