In a medium bowl, whisk together coconut flour and stevia.
Heat peanut butter in the microwave for 30 seconds, leave aside.
Pour sugar-free syrup over it and stir
Add peanut butter, continue stirring until homogenous.
Line parchment paper on a baking sheet.
Make small balls of about 2-inch diameter each,place them on the parchment paper previously prepared.
Microwave sugar-free chocolate with the coconut oil for 30 seconds, stir and microwave again if necessary until it is melted.
With a fork or a chocolate dipping tolls dip peanut butter balls into the melted chocolate, cover them evenly and place them back on the parchment paper.
Place truffles in the fridge for 15 minutes until chocolate is hard.

- 55g Sugar-free chocolate (1.5 oz)
- 1 tbsp coconut oil
