In a food processor, mix the avocado, the grated chocolate and the cocoa
powder, until you get a homogeneous mass (it must be a bit sticky).
If you do not have a food processor, you can crush the avocado with a fork,
add the chocolate and cocoa and knead until all the ingredients are well
integrated.
Now add the sweetener, the lemon zest and the vanilla. Mix well.
Finally, add the cashews and vodka, to intensify the flavor of the truffles
(if desired).
Form a ball with the whole mass and wrap it in plastic film; or if you prefer,
you can put it in a well-covered plastic container so that it does not dry out.
Refrigerate for at least one hour, before molding, as it is molded very easy
when it is cold.
For the cover, add the grated coconut, the crushed peanuts and the cocoa
powder, each in a flat dish.
Remove the dough from the refrigerator.
Proceed to form small balls. And roll each ball on the plate with the coverage
of your choice. You can leave about 4 truffles with each cover.
