This keto mint chocolate fudge is creamy and delish. It makes a perfect low carb dessert or snack. So grab your keto essential ingredients and bake up some tasty fudge.
How to make keto fudge
Heat the heavy whipping cream

and Swerve confectioners sugar substitute together in a saucepan over medium heat on the stove. Use a whisk to combine the ingredients completely.
Continue to cook down the mixture until it begins to thicken and brown slightly.
Remove the mixture from the heat and stir in the vanilla extract.
Place a small amount of the mixture into a separate bowl.
To the remaining bulk of the fudge mixture, add the cocoa powder and whisk thoroughly.
Let the mixture cool for several minutes, and then stir the baking chips into the cocoa flavored mixture. Stir until melted and completely combined.
Place the chocolate flavored mixture into the bottom of a parchment lined loaf pan, and spread it out evenly.
To the reserved small amount of fudge mixture, add a drop of green food coloring and the peppermint extract.
Stir to combine.
Layer the green mint flavored mixture on top of the chocolate mixture in the loaf pan.
Place the fudge into the fridge to set for a minimum of 4 hours.
Slice the set fudge into 12 even pieces and serve.
