Preheat oven to 350Β°F
In a microwave safe bowl melt butter then place in place in mixing bowl
Beat together butter, sugar, brown sugar, egg, banana and vanilla
Whisk flour, baking powder, baking soda, cinnamon, salt together into
well incorporated
Add dry ingredients to wet ingredients and mix together
Blend oatmeal and coconut in batter
Using a cookie scoop or spoon scoop cookies on lined parchment paper
baking sheet
Top with 2-3 chocolate chips per cookie
Bake 10 to 14 minutes

- 1β2 cup lite brown sugar
- 1 banana
- 1 Egg
- 1 teaspoon vanilla
- 1 cup flour
- 1β2 teaspoon baking powder
- 1β2 teaspoon baking soda
- 1β2 teaspoon cinnamon
- 1β4 teaspoon salt
- 1 1β2 cup oatmeal, old-fashioned
- 1 cup unsweetened coconut
Instructions
- Preheat oven to 350Β°F
