In a mixing bowl, bring together the room temperature butter together with the erythritol and mix until everything is well incorporated
Add eggs one at a time together with the vanilla
Add the dry ingredients and stir until all the flour is incorporated
Add â…” of the dough on a baking tray and flatten it out evenly; shape equal sized cookies from the rest of the dough and bake at 180C/350F for 10 minutes or until golden brown on the edges
While the dough is baking, mix the cream cheese with the softened butter, vanilla and erythritol until well combined
Remove the cookies from the oven and allow to cool down completely;
Once the cookie layer has cooled down, add the cream cheese layer on top, followed by crushed cookies on top; sprinkle extra cinnamon on top, if desiredÂ
