Place the ingredients for the crust into a mixing bowl, and combine well until they form a dough.
Put a layer of the dough into the bottom of each section of a mini muffin tin that has been well-greased, push it down into an even layer to fill β of each section.
Add the ingredients for the filling to a mixing bowl, and beat on high until smooth and creamy.
Fill the mini muffin tin sections the rest of the way with the filling mixture.
Place the tin into the freezer to set for several hours before serving.
