Place the butter and Swerve confectioners sugar in a pot over medium heat on the stove. Whisk the ingredients together as the butter melts until they are smooth and creamy.
Continue to cook the mixture down over medium heat until it thickens and becomes a golden brown color. Whisk the ingredients often to keep them from burning.
Remove the mixture from the heat, and stir in the vanilla extract.
Pour the mixture onto a small parchment lined pan or baking sheet.
Sprinkle the peanuts over the surface of the mixture evenly.
Place the mixture into the freezer to set for a minimum of 1 hour.
Remove the brittle once set, and break it into pieces.
Serve immediately, or store uneaten brittle in an airtight container in the freezer.
