In a small mixing bowl, place the almond flour, sweetener, and peanut butter. Integrate the mixture first with the help of a spoon or fork and then gently knead if necessary, until you obtain a moldable dough with a homogeneous consistency. Try the dough, if you want you can add one more teaspoon of sweetener and if you it is to soft, you could also add a tablespoon of almond flour. Finally, add the salt and knead put mixture in the refrigerator, cover the container.
Refrigerate for about 20 minutes in the fridge or 10 minutes in the freezer and remove the mixture. Shape about 10 spheres of similar size. Do it as fast as you can so that the dough does not lose consistency. Let them rest on a plate and bring to the fridge again while the chocolate melts.
Place the chocolate chips in a microwave safe container, add the butter and stir. Melt the chocolate in the microwave; Remember that it is very easy to burn the chocolate, so microwave in 10 second increments until fully melted, remove from the microwave, stir and if there are still solid pieces repeat the procedure until the mixture is completely fluid.
Place the balls one by one in the chocolate, and push with a fork until the balls are completely covered. Remove and place on waxed paper until the chocolate hardens.
