Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.
Add all of the ingredients except for the baking chips to a mixing bowl, and blend on high until smooth.
Fold the chocolate chips into the cookie batter.
Use a cookie scoop to spoon the batter onto the baking sheet in 12 even servings.
Bake for 12-15 minutes until lightly browned and cooked through.
