In a mixing bowl, combine the shredded chicken, chopped green onions, sugar free bbq sauce and salt and pepper to taste. Stir to combine well.
Create 8 small circles on a parchment lined baking sheet with the shredded colby jack cheese. Make sure that there is a bit of space between each circle to allow for spreading of the cheese when it melts.
Bake the cheese for 6-8 minutes until it is melted and the edges of the cheese circles are starting to get browned.
Remove the tray from the oven and let sit for 1-2 minutes.
Place a layer of the bbq chicken filling down the center of each cheese circle.
While still hot, but cool enough for you to handle, gently roll the cheese circles closed around the filling to form a taquito.
