1Package of miracle noodles rinsed and drained well
2tsp.Minced garlic
1Tbsp.Soy sauce
2tsp.Ginger paste
1Tbsp.Rice vinegar
1tsp.Sesame oil
Pepper to taste
2C.Chopped bok choy greens
For the sauce:
2Tbsp.Natural peanut butter
2Tbsp.Soy sauce
1tsp.Minced garlic
1Tbspolive oil with Red pepper flakes to taste added to it
2tsp.Granulated sweetener of choice
ΒΌC.Chicken broth
ΒΌC.Chopped green onions
2Tbsp.Chopped peanuts
Instructions
In a bowl, mix together the peanut butter, 2 Tbsp soy sauce, 1 tsp minced garlic, the olive oil with red pepper flakes, sweetener and chicken broth. Whisk to combine well.
Place the ground chicken and sesame oil in a skillet over medium high heat, and saute until almost completely browned.
Add the minced garlic, soy sauce, ginger paste, rice vinegar and pepper to taste to the skillet, and stir to combine.
Put the bok choy into the skillet, and continue to saute until the meat is completely cooked through, and the bok choy has wilted.
Stir in the miracle noodles.
Pour the sauce over the mixture, and saute until thickened.
Garnish with green onions and chopped peanuts before serving.
