In a bowl, whisk together the mozzarella cheese, eggs, baking powder, confectioner sugar substitute, vanilla extract and ¼ tsp of the cinnamon until well combined.
Add ¼ of the batter to the mini waffle maker and cook for 3-5 minutes until done to your liking.
Repeat step 3 until you have made a total of four chaffles.
Slice the chaffles into sticks.
Add the chaffle sticks to a bowl, and drizzle with the melted butter.
Mix together the granulated sweetener and the remaining cinnamon, and sprinkle over the chaffle sticks. Serve immediately.
