Instructions
Preheat oven to 350 degrees and line two cookie sheets with a silicone baking mat
Using a standing mixer, beat the butter, sugar, brown sugar, egg, and vanilla until fluffy
Using a medium bowl, whisk all the dry ingredients together before gradually mixing into the wet
ingredients
Using a medium cookie scoop, scoop out dough and roll into balls
Using a small bowl, whisk the 1 C sugar and 3 tbsp ground cinnamon
Roll the cookie dough balls into the sugar mixture
Place the cookie dough balls onto the cookie sheet and lightly press dough into a thick disk
Bake in the oven for 10-14 minutes or until firm around the edge and a light golden color
Allow to cool completely
Using a standing mixer, beat the cream cheese, butter, powdered sugar, and vanilla until
creamy, smooth and holds a peak
Scoop the frosting into the piping bag with the round tip
Scoop the dulce de leche into the other piping bag and cut the tip off
Using the cream cheese frosting, pipe a wide circular spiral on the top of the cookie
Fill the inside lines of the circle with the dulce de leche
Allow the frosting to harden for an hour before enjoying!
