In a large mixing bowl, combine the olive oil, sugar free honey, soy sauce, minced garlic, red bell pepper, lime juice and salt to taste.
Add the shrimp to the bowl, and marinate in the fridge for at least 30 minutes.
Place the shrimp evenly onto skewers, and grill over high heat for 2-3 minutes per side.
