In a bowl, mix together the cream cheese and dijon mustard until smooth.
Place the chicken breasts into a casserole dish, and drizzle with the olive oil.
Season the chicken with salt and pepper to taste, and place under the broiler on high for 10 minutes.
Flip the chicken over, and broil another 10 minutes.
Remove the chicken, and top with 1 slice of the swiss cheese.
Add the ham to each piece of chicken, then top with the mustard sauce, before adding the remaining slices of cheese.
Place under the broiler for 2-3 minutes.
Sprinkle with the pork rind crumbs, and place under the broiler for another 2-3 minutes.
Make sure the chicken is cooked completely through before serving. Cooking time can vary depending on the thickness of your chicken breasts.
