How to make keto breakfast sandwich bombs
Place the shredded mozzarella cheese and cream cheese in a microwave safe bowl
and heat at 30 second intervals until completely melted and mixed.
Mix together the almond flour and baking powder in a bowl, and then add the cheese mixture.
Knead the mixture with your hands until completely combined.
Blend the egg into the dough mixture on high.
Place the dough into the freezer for about 30 minutes.
This will make the dough easier to handle.
While the dough is chilling, scramble 2 eggs
cook and crumble four slices of bacon, and cube cheese
Form the chilled dough into 7 equal balls, and flatten each one into a circular shape.
Place some bacon, some scrambled egg and one small cube of cheddar cheese in the center of each piece of flattened dough
and then form the dough up and over the filling until it is completely enclosed.
Bake the stuffed bread balls for 15-20 minutes until browned and completely cooked through.
