How To Make Keto Chaffle Smores

Preheat the mini waffle maker.
In a microwave safe bowl, place the shredded mozzarella cheese

and 1 oz. of cream cheese. Heat at 30 second intervals until completely melted and well combined into a cheese dough.

Place the cheese dough in a mixing bowl, and add the almond flour,

swerve substitute. Knead with your hands until completely combined.

Ingredients
  

For the chaffles:

  • ½ cup Mozzarella cheese shredded
  • 1 ounce Cream cheese
  • 2 tablespoon Almond flour
  • ½ teaspoon Baking powder
  • 2 tablespoon Swerve confectioners sugar substitute
  • 1 teaspoon Vanilla extract
  • 1 Egg

For the marshmallow fluff:

  • ¼ cup Heavy whipping cream
  • 3 tablespoon Swerve confectioners sugar substitute
  • ½ teaspoon Vanilla extract
  • ½ teaspoon Xanthan gum

For the chocolate filling:

  • 2 ounce Cream cheese softened
  • 3 tablespoon Heavy whipping cream
  • 2 tablespoon Swerve confectioners sugar substitute
  • 1 tablespoon Cocoa powder unsweetened

Instructions
 

  • Preheat the mini waffle maker.
  • In a microwave safe bowl, place the shredded mozzarella cheese and 1 oz. of cream cheese. Heat at 30 second intervals until completely melted and well combined into a cheese dough.
  • Place the cheese dough in a mixing bowl, and add the almond flour, swerve substitute and baking powder. Knead with your hands until completely combined.
  • Add the vanilla extract and egg to the dough mixture, and blend on high until smooth.
  • Place ⅓ of the mixture into the mini waffle maker, and cook for 3-5 minutes until done to your liking.
  • Repeat step 5 with the remaining batter to make 3 chaffles total.
  • In a mixing bowl, combine the ingredients for the marshmallow fluff, and beat on high until thickened.
  • Add the ingredients for the chocolate filling to a mixing bowl, and beat until smooth and creamy.
  • Place a chaffle down on a plate. Add ½ of the marshmallows fluff and half of the chocolate fling to the top of it, and then top with another chaffle.
  • Repeat step 9 with the remaining filling, and top with the last chaffle.
  • Drizzle with sugar free chocolate sauce and chopped sugar free marshmallows for garnish if desired.
