How To Make Keto Christmas Crack

Step 1. I start by making a fresh batch of keto saltines, but I skip the sea salt on the outside since we want a neutral base for our sweet toffee. I bake them for 10-12 minutes until they’re lightly golden and perfectly crispy, then let them cool completely. This step is crucial because the crackers need to be sturdy enough to hold all that delicious toffee!

Step 2. Now for the magic toffee layer! I melt the butter in a saucepan over medium heat, then whisk in the brown sugar substitute until it’s completely combined. The key here is to keep whisking constantly and let it come to a rolling boil for exactly 3 minutes. You’ll see it transform into this gorgeous, bubbling golden mixture that smells absolutely incredible!

Step 3. I line my baking sheet with parchment paper and arrange the cooled keto crackers in a single layer, making sure they’re touching each other. After mixing the vanilla into that beautiful toffee mixture, I pour it evenly over the crackers and pop it in the oven for 5 minutes. This helps set the toffee and creates the perfect base for our chocolate layer!

Step 7. Once everything is completely hardened (usually about 2 hours in the fridge), comes my favorite part – breaking it into pieces! Ingredients
  

  • 1 Batch Keto Saltines made without the sea salt on the outside
  • ⅔ C. Butter unsalted
  • ⅔ C. Swerve brown sugar substitute
  • 1 tsp. Vanilla extract
  • 7 oz. Lily’s baking chips
  • Sugar free Christmas sprinkles

Instructions
 

  • Mix up a batch of the keto saltines without the sea salt on the outside of the cracker, and bake for 10-12 minutes until lightly browned and cooked through. Let the crackers cool.
  • In a saucepan over medium heat on the stove, melt the butter.
  • Add the brown sugar substitute to the saucepan with the melted butter, and whisk to combine well. Continue whisking and bring the mixture to a rolling boil for 3 minutes.
  • Place a piece of parchment paper or a silicone baking mat on a baking sheet. Layer the keto crackers in a flat layer touching each other.
  • Mix the vanilla extract into the toffee mixture.
  • Spread the toffee mixture over top of the crackers bake in preheated 350 degree oven for 5 minutes.
  • Sprinkle the chocolate chips over the entire top of the toffee covered crackers. Let sit, and spread the chocolate evenly once melted.
  • Add the sugar free Christmas sprinkles to the top of the chocolate, and place the baking sheet into the fridge to allow the mixture to set.
  • Once hardened, bread the keto Christmas crack into even pieces and serve.
