Preheat the oven to 180 °C / 350 °F, prepare a baking tray with parchment paper or a silicone sheet.
In a small mixing bowl, integrate: egg white, sweetener, butter, vanilla, cinnamon and nutmeg; stir well with a spoon until everything is perfectly integrated.
In the food processor, add the nuts and process them for a minute, then add the cashews and finally the pumpkin seeds. You must obtain many whole grains; the idea is to break them a little, but not turn them into dust.
Remove from the food processor and place in a large bowl, sprinkle with the egg white mixture and try to moisten all the grains. Add the coconut and rub again. You will get some granola clusters.
Spread the granola on the baking sheet and bring to the oven for about 15 minutes or until the granola is golden brown. This will depend on the power of your oven.

You can keep the granola in a air tight container for up to a week.
