This low carb soup is easy to prepare and comes together quickly. You can use leftover chicken and prepare a few vegetables for this tasty soup. Although this is a stove top soup you could prepare in crock pot or instant pot too.
Heat olive oil in a braising pan. Add chicken pieces and slightly sear.
Add garlic, onions, bell peppers, and jalapenos. Sweat until aromatic.
Add spices and roast briefly.
Add stock and tomato sauce. Simmer for 10-15 minutes.
Ladle into bowls and serve with choice of toppings.
