A cauliflower casserole can be a delicious dinner on its own, but if you wish it is the ideal side dish for many meat dishes, as cauliflower is so versatility, and it’s mild flavor goes well with many dishes.
Since I started the keto diet, I have learned to prepare it in multiple forms, cauliflower rice is very simple and the cauliflower casserole is among my favorites along with keto cauliflower mac and cheese.
Do not hesitate to prepare this delicious and simple dish that always remains a 10 in our household.
Preheat oven to 180°C/350°F. Prepare a baking dish / casserole dish.
Prepare cauliflower – clean and cut into florets
In a medium pan, place butter over medium heat; when melted and well heated, add thinly sliced bacon. Cook for about five minutes until bacon releases its full flavor. In the bacon fat, in the same pan, fry the onion and garlic. When the onion is transparent, turn off the stove and remove from heat.
In a medium mixing bowl, mix the bacon with onion, cauliflower cut into florets, milk, sour cream, cheddar cheese, nutmeg, salt and pepper to taste. Stir well until all is integrated. Pour into a baking dish and cover with foil.
Bake covered for about 30 minutes; when cauliflower is soft, remove from oven and sprinkle with remaining cheese. With the oven turned off, place the baking dish uncovered back in and let the cheese melt. You can also broil for a crispy topping for about 3 minutes.
Sprinkle some finely chopped parsley and black pepper.

- Large cauliflower (1 Kg.)
- 2 Tablespoons butter
- 3 slices of bacon
- 1 Small onion
- 1 Clove of garlic
- 1 Cup of unsweetened almond milk
- ½ Cup of sour cream
- ½ Cup cheddar cheese
- ½ Cup shredded cheese (of your choice)
- Pinch of nutmeg
- Salt and pepper to taste
