This keto friendly recipe uses cauliflower florets and not riced cauliflower. This is a baked keto cauliflower casserole with a delicious cauliflower mac and cheese sauce.

Preheat the oven to 375 degrees.
Cut a head of cauliflower into florets, steam or boil until they are a crisp tender.
Should take about 5 minutes.
Completely strain the cauliflower, and place in a greased baking dish. Add salt
and pepper to taste.
In a skillet over medium-high heat add 1 cup of heavy whipping cream, and bring it to
a low simmering boil.
Whisk in the garlic powder
onion powder and salt and pepper to taste
Add 3 ounces of cream cheese. Stir until it is smooth & completely incorporated.
Stir in 1 cup of cheddar cheese.
Sprinkle in ยฝ cup of mozzarella cheese. Stir the cheese sauce until it thickens and is
smooth.
Pour the cheese sauce over top of the cauliflower in the baking dish. Stir to coat the
cauliflower well.
Sprinkle ยผ cup of Parmesan cheese on top of the cauliflower.
Bake the cauliflower for 15-20 minutes or until the mixture is browned on top and
bubbly. If you want a more browned appearance on the top of your mac and cheese you can
turn the broiler on for the last few minutes. Enjoy

Using a cast iron skillet I cook four strips of bacon, sauteed cauliflower in drippings (added a little more drippings). Added smoked gouda on top and baked for 15 minutes on 350. AMAZING! The entire family ate it, even my son who does not care for cauliflower. Thank you!
