How to make keto sweet and sour chicken
Stir together all ingredients for the sauce in a bowl.
Lightly season chicken pieces with salt and pepper.
Heat avocado oil in a wok.
Add chicken and stir until lightly browned on both sides & cooked
Add bell peppers and stir for another minute.
Add sauce mixture in and simmer for 5 minutes.
Top with spring onions
and serve over a bowl of cauliflower rice.

Ingredients
- 300 grams Chicken Thigh Fillets, cut into bite-sized pieces
- 1 small Bell Pepper, diced
- 1 tbsp Avocado Oil
- 2 tbsp Chopped Spring Onions
- Salt and Pepper, to taste
For the Sweet and Sour Sauce
- ¼ cup Sugar-Free Tomato Ketchup
- 1 tbsp Coconut Aminos
- 1.5 tbsp Cider Vinegar
- 1 tbsp Erythritol
- 1 tbsp Sesame Oil
- ½ tsp Ginger Powder
- 2 tbsp Water
Instructions
- Stir together all ingredients for the sauce in a bowl.
- Lightly season chicken pieces with salt and pepper.
- Heat vegetable oil in a wok.
- Add chicken and stir until lightly browned on both sides & cooked
- Add bell peppers and stir for another minute.
- Add sauce mixture in and simmer for 5 minutes.
- Top with spring onions and serve over a bowl of cauliflower rice.
