How to make keto raspberry lemon cookies
Add the erythritol to the melted butter and whisk with until well combined.
Add the heavy cream and whisk
Add the dry ingredients
Add raspberries and gently mix
Separate the dough into 8 balls.
Place the balls onto a baking tray lined with parchment paper. Bake the cookies for about 8-9 min in preheated to 350F oven.
For the glaze:
Stir together lemon juice and powdered erythritol
Drizzle glaze over cooled cookies.

Ingredients
- ¾ cup almond flour
- ¼ cup melted butter
- 6 tbsp erythritol
- 2 tbsp heavy cream
- ½ tsp xanthan gum
- pinch of salt
- 1/2 cup raspberries
Glaze:
- 1 tbsp lemon juice
- 2 tbsp powdered erythritol
Instructions
- Add the erythritol to the melted butter and whisk with until well combined.
- Add the heavy cream and whisk
- Add the dry ingredients (almond flour, salt & xanthan gum)
- Add raspberries and gently mix
- Separate the dough into 8 balls.
- Place the balls onto a baking tray lined with parchment paper. Bake the cookies for about 8-9 min in preheated to 350F oven.
