These lemon cheesecake fat bombs are so delicious and make a great sweet treat.

Keto Lemon Fat Bombs - BEST Lemon Cheesecake Fat Bombs - Easy NO Bake Low Carb Recipe
In a medium bowl, add cream cheese and butter. Mix well.


Add vanilla and lemon juice and mix well.


Fold in flour, sugar substitute, 1.5 tablespoons confectioners’ sugar and
1/2 cup coconut until mixture forms a dough like consistency.

Freeze mixture for 10 minutes
Remove dough from the freezer and roll into small balls (about 1”)

In a small bowl, add remaining coconut and confectioners’ sugar. Mix well.Β 

With a cookie scoop or hand roll into balls then roll each ball in the coconut
mixture.


Place back in the freezer for about an hour.
Store in an airtight container in the fridge if you like them softer and the
freezer if you like them firmer.

Ingredients

  • 1/4 cup cream cheese at room temperature

  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla
  • 1/2 cup almond flour
  • 2 tablespoons keto friendly sugar substitute
  • 3 tablespoons keto friendly confectioners’ sugar, divided
  • 1 cup shredded coconut, divided

Instructions

  1. In a medium bowl, add cream cheese and butter. Mix well.
  2. Add vanilla and lemon juice and mix well.
  3. Fold in flour, sugar substitute, 1.5 tablespoons confectioners’ sugar and 1/2 cup coconut until mixture forms a dough like consistency.

      Swerve is a great keto sugar substitute. Not sure if you have a Kroger but around here it’s at my local Kroger grocery store.

    I made these! I added twice the lemon juice and the zest of one lemon… and some lemon extract. I added a little extra sweetener – to taste, and a skosh of salt (to bring out the lemon flavor, lol). I also quadrupled the recipe so I was using an 8 oz block of cream cheese. I would not call them lemon fat bombs… I am calling my version Little Balls of Lemon Heaven!!
