Layer three slices of deli sliced Italian lunch meat on a flat surface.
Include one slice of each of the three types of meat, and overlap them slightly.
Place half of a slice of mozzarella cheese on top of the meat.
Place a layer of shredded lettuce, chopped tomatoes and two banana pepper rings down the center of the lunch meat layer.
Gently roll the lunch meat up around the fillings, and secure closed with a toothpick.
Repeat steps 1-4 until you have created 8 roll ups.
In a jar, combine the olive oil, vinegar, Italian seasoning as well as salt and pepper to taste.
Shake well until the mixture is combined, and use the dressing as a dipping sauce for your roll ups.
