Preheat oven to 350 degrees and prepare a muffin pan by placing liners
inside or greasing with nonstick cooking spray.
Cut the peeled carrots into large chunks and place them in the bowl of a
food processor or blender. Chop the carrots into small bits and set aside.
In a large bowl, add the white sugar, brown sugar, applesauce, and eggs.
Mix until well combined.
Fold in the chopped carrots.
In a separate bowl, whisk together the whole wheat flour, baking soda,
baking powder, salt, and cinnamon.
Combine the dry ingredients and wet ingredients. Stir until just incorporated.
Fill each muffin cup 2/3 of the way full with batter. Bake for 20 to 25
minutes for full-sized muffins or 15 to 20 minutes for mini muffins. Muffins
will be done when a toothpick inserted into the center comes out clean.
Use regular size muffins or mini muffins – points for both below
Allow muffins to cool in the pan for 10 minutes, then remove them to a wire
cooling rack to cool completely before serving.

In the beginning It says its 2 points for each carrot muffin, at the end it says its 3 points, which is it ?

Please read carefully – regular sized muffin has 3 Weight Watchers Freestyle Points and each mini muffin has 2 points. This just gives you the option to make mini or regular. Thanks

I love recipes that turn out exactly like the picture, and this one does! I used all-purpose flour instead of whole wheat but otherwise stuck to the recipe. Mine needed only 16 minutes to bake perfectly. The best I could figure out, each full-sized muffin is about 80 calories? Tastes delicious!
