How to make Weight Watchers lemon bars
Combine all ingredients for the pastry base in a bowl. Blend into a crumbly dough with a pastry cutter or food processor.
Press the dough into an 8”x8” baking pan lined with parchment.
Bake for 20 minutes at 350F.
Meanwhile, whisk all ingredients for the lemon layer in a bowl.
Take the baking pan out of the oven and allow to cool slightly. Pour lemon mixture in.
Bake for another 20-25 minutes.
Leave to cool for about 15 minutes before slicing.

- ¼ cup Erythritol
- 1 cup All-Purpose Flour
For the Lemon Layer
- ¾ cup Erythritol
- 2 Eggs
- 2 tbsp All-Purpose Flour
- Juice and Zest of 1 Lemon
Instructions
