In a microwave safe bowl, combine the mozzarella cheese and cream cheese. Heat at 30 second intervals until the cheeses are melted and completely combined.
Add the whey protein, 2 tbsp Swerve confectioners sweetener, baking powder to the cheese mixture, and knead with your hands until well incorporated.
Place the dough into a mixing bowl, and beat the egg and vanilla into it until a smooth batter forms.
Put a third of the batter into the mini waffle maker, and cook for 3-5 minutes until your desired level of doneness has been reached.
Repeat step 5 with the remaining â…” of the batter, for a total of 3 chaffles made.
Beat together the ingredients for the glaze topping, and pour over the chaffles before serving.
