In a small bowl combine the flour, oats, walnuts, maple syrup, butter, vanilla, cinnamon, nutmeg, and the salt. Set aside 3 Tbsp of batter for topping.
In another small bowl, toss the chopped apples in the filling ingredients.
In a microwavable mug, spoon half of the cake batter to the bottom, followed by half of the apple filling mixture. Repeat with the other half of cake batter and apply pie filling.
Top with 3 Tbsp cake batter you had set aside.
Sprinkle top with brown sugar, cinnamon, and walnuts.
Microwave mug for 2 minutes.
Carefully remove from microwave using oven mitt as mug will be hot.
Let cool for 1 minute and top with vanilla ice cream. Enjoy warm with vanilla ice cream
