Place the baking chips, peanut butter and coconut oil into a microwave safe dish. Heat for 30 seconds at a time until the chocolate is melted and the ingredients are combined.
In a mixing bowl, toss together the chopped sugar free marshmallows and the pecans.
Pour the chocolate mixture over the pecans and marshmallows in the bowl, and stir carefully to coat and combine.
Drop the mixture by the heaping tablespoon onto a parchment or silpat lined baking sheet and refrigerate for 1 hour before serving.
Notes
Marshmallow Tip - If you wet your hands slightly, it is easier to tear the marshmallows apart without having them stick to you or a knife.
