In a mixing bowl, whisk together all of the ingredients for the chaffle until well combined.
Add ¼ of the chaffle batter to the waffle maker and cook for 2-4 minutes until done to your liking.
Remove the chaffle from the maker, and repeat until you have made a total of four chaffles.
In a mixing bowl, combine all of the ingredients for the filling, and beat on high until smooth.
Place the chocolate chips and the coconut oil in a microwave safe bowl, and heat at 30 seconds intervals until melted and combined.
Top each of three chaffles with â…“ of the filling, stacking the chaffles on top of each other as you go.
Drizzle the chocolate over the top of the chaffles before serving.
