For the icing:
6Tbsp.Butter softened and unsalted
6oz.Cream cheese softened
1tsp.Vanilla extract
½C.Swerve confectioners sugar substitute
Instructions
Mix together all of the ingredients for the cake with the exception of the food coloring and sprinkles.
Separate the batter into 4 bowls.
Add a few drops of food coloring to each bowl, a different color for each bowl. Mix well to color the batter completely.
Drop the batter by the spoonful into the bottom of a well greased Crockpot, alternating colors as you go.
Cover, and cook on high for 2 hours. Remove, and let cool completely.
Blend together the ingredients for the icing until smooth.
Cut the cake into even slices, and spread with the icing before serving.
