How To Make Keto Ritz Crackers
In a mixing bowl, beat together butter
egg whites
almond flour
and xanthan gum until well combined.
Place the dough into the freezer for 30 minutes to harden a bit.
This will make it easier to handle and to cut out the crackers shapes.
Roll the chilled dough out between two pieces of parchment paper until it is your desired thickness for your crackers.
Be sure not to make the dough too thin, or it will be hard to transfer the cut out crackers to a baking sheet.
Use a cookie cutter or other round object to cut out circles from the dough about the size of Ritz crackers.
Transfer the crackers to a parchment lined baking sheet.
Preheat the oven to 350 degrees.
Poke holes in the top of each cracker with the tines of a fork.
Sprinkle salt to taste on the top of each cracker.
Bake the crackers for 8-10 minutes until browned, crispy and cooked through.

How many crackers in a serving?

I made them and they did taste buttery. They softened quickly though

Love these.. Tried several recipes..
This is my favorite. Crunchy, buttery,..
I just rolled into little balls and flattened into circles instead of rolling out.

These were really good! Loved the flavor. Added them to a keto charcuterie board for Thanksgiving. My husband and kids ate them up fairly quickly. They did warm up after rolling them out- so I put them back in the freezer after rolling and cutting so I could handle the dough. These definitely are something I’m planning on making again- if not weekly for school lunches.
Diane says
How many crackers does this recipe make? And how many per serving?

Can these be frozen? before or after baking?
How to store them – in fridge or on the counter?
Sara pomish says
These are delicious. I got them really thin by actually cutting the crackers out right on the parchment paper on the baking sheet so that I didn’t have to move them before I baked them.
