How To Make Keto Bagels
Preheat the oven to 400 degrees.
Place the mozzarella cheese and cream cheese into a microwave safe bowl. Microwave for 1 minute, stir, and continue to heat at 30 second intervals until the cheese is completely melted and well blended.
In a mixing bowl, combine the almond flour, coconut flour, baking powder and Swerve sweetener.
Add in the melted cheese, and knead it into the dry ingredients with your hands.
Once combined, add in the egg and vanilla extract. Beat the mixture on high until thoroughly mixed.
Place the dough into the fridge for 30 minutes.
Remove the dough from the fridge and form it into 16 even sized balls.
In a small bowl, combine the cinnamon and granulated sweetener until well combined.
Brush the butter onto each of the bagel bite dough balls.
Roll the butter coated bites into the cinnamon/sweetener mixture, and place them onto a well greased baking sheet.
Bake for 10 minutes until browned and cooked through.

I love this idea and was so excited to make them. Take the bagel part seriously…these are more cinnamon bread like than donut like. Which is ok – it says bagel. 🙂 For me I wanted them sweeter so I mixed up a keto powdered sugar glaze and rolled them in it after tasting the first one to make them more donut like. They were also just a tad large to be a comfortable single bite so I will probably make 32 next time and adjust the baking time. Fun recipe! Thanks for sharing it.
