Preheat oven to 325F.
Line a 9”x9” baking pan with parchment, leaving overhangs by the sides for easy removal.
Cream the butter and erythritol in a bowl until light and fluffy.
Beat in the almond flour.
Press the mixture into the prepared baking sheet and bake for 15 minutes. Leave to cool.
Combine butter, Swerve brown sugar, and maple syrup in a saucepan. Cook over medium heat for 3-5 minutes.
Remove from heat then whisk in cream.
Leave mixture to cool for about 15-20 minutes to thicken.
Pour over the cooled crust then chill for 15 minutes.
Melt together all ingredients for the chocolate layer you can use double boiler or microwave
Pour the melted chocolate in an even layer over the caramel.
Let the chocolate layer set before unmolding and cutting.

For the Shortbread Base:
- 1 cup Almond Flour
- 3 tbsp Softened Butter
- 3 tbsp Erythritol
For the Caramel Layer:
- ½ cup Heavy Cream
- 2 tbsp Butter
- 2 tbsp Swerve brown sugar
- 1 tsp Sugar-Free Maple Syrup
For the Chocolate Coating:
- 75 grams Lily’s Chocolate
- 2 tsp Erythritol
- 1 tsp Vanilla Extract
Instructions
