How To Make Keto Caramel Candy
Line an 8”x8” baking pan with parchment, leaving overhangs by the sides for easy removal.
Brush the parchment with butter.
Put the butter in a heat-proof bowl and set in the microwave until melted.
Stir in the erythritol, syrup, and heavy cream.
Microwave for 10-12 minutes at 4-minute intervals, stirring in between intervals.
To test, drop a small amount of the caramel in cold water.
Caramel should hold into a ball but still remain soft.
Once desired consistency is reached, stir in vanilla and salt.
Pour the caramel into the prepared pan and allow to cool.
Remove from the pan and cut into squares.
Chill until ready to serve.

I made these and they turned out great. I have made traditional caramels for years at Christmas time. I used Allulose as my sweetner as I was out of erythritol. Used Fiber yum syrup. I did have to microwave them about 3 minutes longer but the taste is great.
