How To Make Keto Chaffle Thin Mint Cookie
Preheat the mini waffle maker.
In a mixing bowl,
whisk together all of the ingredients for the chaffle
until well combined.
Add ¼ of the chaffle batter to the waffle maker and cook for 2-4 minutes until done to your liking.
Remove the chaffle from the maker, and repeat until you have made a total of four chaffles.
In a mixing bowl,
combine all of the ingredients for the filling,
and beat on high until smooth.
Place the chocolate chips and the coconut oil in a microwave safe bowl, and heat at 30 seconds intervals until melted and combined.
Top each of three chaffles
with ⅓ of the filling, stacking the chaffles on top of each other as you go.
Drizzle the chocolate over the top of the chaffles before serving.

- 3 Tbsp. Swerve confectioners sugar substitute
- 2 Tbsp. Unsweetened cocoa powder

- 6 oz. Cream cheese softened
- ½ C. Almond flour
- ¼ C. Swerve confectioners sugar substitute
- 2 Tbsp. Unsweetened cocoa powder
- ½ tsp. Vanilla extract
- 1 tsp. Peppermint extract
For the chocolate drizzle:
- 3 Tbsp. Lily’s baking chips
- 1 Tbsp. Coconut oil
Instructions
