How To Make Keto Strawberry Swirl Cake Mix Cookie Bars
Preheat the oven to 350 degrees.
In a mixing bowl, beat together the Swerve cake mix
2 eggs, ½ cup of coconut oil and vanilla extract until completely combined and smooth.
Press the batter into an even layer in a greased 9×9 baking dish.
Blend the strawberries
and 2 tbsp of Swerve confectioners sugar sweetener in a food processor until it forms a smooth liquid.
Pour the strawberry liquid over the surface of the cookie mixture in the baking dish, and swirl it into the top with the tip of a butter knife.
Bake the cookie bars for 30-35 minutes or until browned on top and cooked through completely.
Let the cookie bars cool to room temperature.
Place the Bake Believe white chocolate chips and 1 tbsp of coconut oil into a microwave safe bowl, and heat for 1 minute or until completely melted and combined.
Use the tines of a fork to drizzle the white chocolate mixture over the top of the cookie bars.
Place the cookie bars into the freezer to set for 30 minutes before serving.
