The blueberries in these cookies make them so moist and delicious. They
make a perfect low carb dessert or snack. So grab your keto essential
ingredients and bake up some tasty cookies. These keto cookies are bursting
with flavor.
Mix almond flour, coconut flour and xanthan gum in a food processor. Add butter and cream cheese, mix for a few seconds. Add egg pulse well
Wrap the dough in a plastic film and refrigerate for an hour.
Warm the butter in a small saucepan over medium-low heat.
Stir in the powdered erythritol until it dissolves.
Add the blueberry and cinnamon then stir well.
Reduce heat and simmer, covered, on low heat for 10-15 minutes, stirring occasionally.
When the mixture is thick and syrupy, remove from heat and adjust sweetness to taste.
Roll out the dough between two sheets of parchment. Cut out the circles
put the filling in each cookie, top each with one of the remaining rounds crimp the edges using fork.
Put in the freezer for 10 minutes.
Brush each pie cookie with slightly beaten egg. Cut small slits in the top of each pie.
Bake in the oven preheated to 200°C/400°F for 15-20 minutes

- 1 tsp. Xanthan gum
