How To Make Keto Cookies
For the cookies:
Preheat the oven to 180 C / 350 F
Mix all the ingredients to make dough. It will be a little crumbly, so work carefully.
Using a spoon and hands make 16-18 cookies
Bake for 10-12 minutes
Cookies will seem soft. Allow it to cool to harden
Melt butter and erythritol on medium heat.
Continue to heat, stirring with a spoon, until it changes color to caramel it should take less than 5 minutes.
Add heated heavy cream. Mixture will foam terribly. So add a third of the heavy cream, wait until settle, and then gradually pour others part.
Continue to stir this boiling mass for about 7-10 minutes till liquid cream will slowly turn into a thick caramel mass.
Top cooled cookies with 1 teaspoon of caramel. Let cool.
Microwave chopped chocolate and erythritol in 30 second intervals, stirring in between, until totally melted.
Top cooled caramel with about 1/2 teaspoon melted chocolate.

- 1 1/2 cup almond flour
- 1 egg
- 3 tbsp. softened butter
- pinch of salt
- 3 tbsp. erythritol
Caramel topping
- 1/2 cup heavy cream
- 2 tbsp butter
- 2 tbsp erythritol
Chocolate topping
- 50 gr Lilys chocolate
- 2 tsp erythritol
Instructions
