Ingredients

  • 1 C. Chopped walnuts
  • 1 C. Chopped pecans
  • ¾ C. Sliced almonds
  • ½ C. Unsalted pumpkin seeds
  • ⅓ C. Raw unshelled sunflower seeds
  • ¼ C. Swerve confectioners sugar substitute
  • ¼ C. Butter melted
  • 1 Egg white
  • 1 tsp. Vanilla extract
  • 2 Tbsp. Pumpkin pie spice

Instructions

  1. Preheat the oven to 300 degrees.
  2. Mix the walnuts, pecans, almonds, pumpkin seeds, sunflower seeds, sugar substitute and pumpkin pie spice together well in a bowl until well combined.
  3. Add the egg white, melted butter and vanilla extract to the bowl with the other ingredients, and toss until coated well.
  4. Place the granola mixture on a well greased or parchment lined baking sheet in a single layer.
  5. Bake the granola for 25 minutes until browned and toasted.
  6. Let the granola cool to room temperature before serving or storing in an airtight container in the fridge.
