Combine the instant pudding mix and 1 cup of almond milk in a bowl, and whisk until smooth and creamy.
Place the pudding into the fridge to set for a minimum of 1 hour.
Add the heavy whipping cream
Swerve sweetener
and vanilla extract to a mixing bowl
and beat on high until soft peaks have formed.
Fill ⅓ of a small jam jar
with the chocolate pudding mixture.
Layer the whipped cream mixture on top of the chocolate, filling the jar ⅔ of the way full.
Finish filling the jar with another layer of the chocolate pudding.
Top the pudding with some crumbled pieces of chocolate cookie.

- 1 box Sugar free instant chocolate pudding
- 1 cup Almond milk unsweetened
- ½ cup Heavy whipping cream
- 3 tablespoon Swerve confectioners sugar substitute
- 1 teaspoon Vanilla extract
- 2 Prepared keto chocolate cookies (use this chocolate cookie recipe)
Instructions
- Combine the instant pudding mix and 1 cup of almond milk in a bowl, and whisk until smooth and creamy.
- Place the pudding into the fridge to set for a minimum of 1 hour.
