How To Make Low Carb White Chocolate Mousse Filled Strawberries
Trim the top off of each strawberry, and cut a small portion of the tip off of the bottom of each strawberry so that they can stand on their own when placed on a flat surface.
Use a small spoon or straw to remove the center of each strawberry.
In a mixing bowl, beat ¼ cup of the heavy whipping cream
Swerve sugar substitute
and vanilla extract until it forms stiff peaks.
Set aside.
In a mixing bowl, blend together the cream cheese and 1 tablespoon of heavy whipping cream until smooth and creamy.
Place the white chocolate chips and coconut oil into a microwave safe bowl.
Microwave for 1 minute until the chocolate is completely melted and the ingredients are combined well.
Mix the chocolate mixture into the cream cheese mixture until well combined.
Fold the heavy whipping cream mixture into the rest of the ingredients until just mixed.
Place the mousse mixture into a piping bag, or a Ziploc with the tip cut off.
Fill the center of each strawberry with the mousse mixture and serve.
