How To Make Creamy Tortellini Soup
Slice the Italian sausages into thin slices, you can dice them if you prefer.
Turn the stove on to medium heat.
Pour the oil into a large pot, and when it is hot, add the onion & sausage.
Sauté it for about three minutes until it looks translucent.
Add the diced tomatoes, cook for a couple of minutes, and immediately add the tomato paste, dried oregano, salt, and pepper.
Stir while cooking for about three more minutes.
Add the chicken broth, and turn the heat to high until the soup is bubbly.
Add the tortellini to cook in the sauce.
Keep the temperature on high for about seven to ten minutes until the tortellini are cooked through.
Lower the temperature of the stove to medium heat, add the cream cheese and the chopped basil leaves.
Stir with a spoon to prevent the tortellini from sticking to the bottom of the pot.
When the cream cheese has melted and is fully incorporated into the mixture, turn off the stove and serve.

- 1 package of stuffed tortellini 700 g. (of your preference, you can also use ravioli)
- 300 g. Fully cooked Italian sausages
- ¾ cup of cream cheese 180 g.
- 2 tbsp of oil
- 1 onion finely chopped, 100 g.
- 1 can of diced tomato 400 g.
- ½ cup of tomato paste 100 g.
- 4 cups of chicken broth 1 l
- 1 cup fresh basil leaves
- 1 tsp of dried oregano
- Salt and pepper to taste
