Combine the cheeses in a mixing bowl.
Place tablespoons of the cheese mixture in heaped circular chip shapes on the parchment lined baking sheet.
De-seed and finely chop the jalapeno pepper.
Place a bit of the jalapeno on each of the piles of cheese on your baking sheet.
Bake for 8-10 minutes until the cheese chips have begun to crisp and brown around the edges.
Let cool completely before serving.
